How to do the right-click > New File thing on OSX

How to create a new document without having to open the Application first:
1) Make up the folder
2) Fill it with templates
3) Go to Get Info
4) Lock it and drag it into your dock to make it a stack
5) Click on the Stack and then the document type to create that one
